Summer Solstice sweet seasonal treats

The summer solstice marks the time of celebration and marks the fruition of our efforts from the long, dark, and rainy winter and spring seasons. The summer solstice symbolizes celebration and marks the halfway point of the year. It is a time of solar energy, socializing, fertility, flirtation, and brightness.

Last night for the Summer Solstice, I gathered my witches and celebrated the seeds we've planted since January and watching the hard work and perseverance bloom. 

Summer Solstice & Full Moon Rituals: 

Light a candle. Express gratitude to all you have received this year. Make a list of the highlights from the year if that helps you to remember. Give gratitude to your sacred heart and celebrate yourself from a deep place of love, admiration, and awe. You are deserving! 

Full Moon Release: Write a list of emotions and thoughts that feel like a weight on your shoulders. Expel any negativity and let it go. I mean truly let it go, stomp on that list and tear it to pieces and scream if you have to.

Ingredients

  • 1 Store-bought pie crust (vegan and gluten free options available!)

  • 2 cups of any sort of fruit or berries (chopped strawberries, blueberries, apples, peaches)

  • 3 ½ tablespoons honey

  • 1 tablespoon fresh lemon juice

  • 2 tablespoons chia seeds

  • 1 teaspoon pure vanilla extract

  • 3 tablespoons coconut sugar (for sprinkling)

  • Coconut whipped cream for serving (recipe attached!)

 

Method

Preheat the oven to 350 degree F

Roll out the dough for the pie crust according to instructions, place in a pie pan or baking sheet

In a small saucepan over medium low heat, combine the chopped fruit of your choice with the honey, chia seeds, lemon and vanilla. Heat and stir until it makes a chutney-like consistency. Remove from heat and then allow to cool slightly

Spoon the filling in the center of the dough leaving a 2 inch border. Fold the edges of the dough up and over the filling

Sprinkle the assembled pie with coconut sugar and bake until the crust browns slightly and the filling bubbles 12-17 minutes

Allow the galette to cool before slicing and serve with coconut whipped cream!

 

Coconut Whipped Cream

ingredients

1 14-ounce full fat coconut milk

1/2 tsp vanilla extract (optional)

 

method

Chill your coconut cream or coconut milk in the refrigerator overnight

Remove the coconut milk can from the fridge and remove the lid. Scrape out the top, thickened cream and leave the liquid behind (reserve for use in smoothies).

Place hardened cream in your mixing bowl. Beat for 30 seconds with a mixer until creamy. Then add vanilla (optional) and mix until creamy and smooth – about 1 minute. Avoid over whipping because it can cause separation. Taste and adjust sweetness as needed.

Use immediately or refrigerate – it will harden and set in the fridge the longer it’s chilled. Will keep for up to 1 – 2 weeks!
